Which sweetener you use can subtly change the drink’s profile. If you’re looking for a cocktail that reminds you of a campfire on a chilly autumn night, try swapping the demerara for maple syrup. The maple brings out nuttiness from the bitters and smokiness from the Reposado. For a more dramatic presentation, try making a pear fan: cut four thin, even slices of pear. Fan the slices out like feathers, then spear them with a cocktail pick. To stop your garnish from browning, dunk it in lemon juice.

Servings: 1 Prep time: 3 minutes
2 parts Código 1530 Reposado Tequila
½ part spiced pear liqueur
¼ part rich demerara syrup
1 dash fennel bitters
1 dash black walnut bitters
1 Luxardo cherry
4 thin pear slices for garnish
How to Prepare
1 Add Código, demerara syrup, pear liqueur, and bitters to an old fashioned glass with a large ice cube.
2 Stir with a bar spoon for about 20 seconds, or until glass becomes noticeably colder.
3 Garnish with pear slices and Luxardo cherry.
